Description

A unique Barbera d'Asti that was born from the perseverance and passion of our oenologist Enzo Gerbi and viticulture technician Salvatore Giacoppo. We leave to you the emotions and sensations they have experienced in this research that began in 2010, availing themselves of the collaboration of the “Department of Viticulture and Enology” of the University of Turin. Taste the characteristics of a unique Barbera d'Asti, everyone will find different nuances and stop to think about the individuality of an extraordinary grape variety.

Winemaking

Destemming-crushing, fermentation and maceration at a controlled temperature (28-30°C) for approximately 15 days, subsequent malolactic fermentation and remaining on the lees for a few months.

Refinement

Every year our winemaker chooses the best solution to alternate storage in concrete, steel and wooden containers depending on the characteristics of the vintage. To keep it in wood, a particular and unique grape/egg-shaped barrel is used which you can admire in the "L'Anima del vino" museum. After bottling, a subsequent refinement in the bottle is carried out for approximately 10 months before being put on the market.
